Como conservar o Grão Cru (Café Verde)?

Antes tarde do que nunca... segue trecho do livro que eu havia comentado sobre congelar café verde.

 

"Freezing - that is, storing green coffee in vacuum-sealed bags at a temperature below 32°F (0°C) — preserves flavor almost perfectly for years. Some roasters freeze special lots of beans and offer them as “vintage” coffees years after harvest, but there is not much consumer demand for such coffees at the moment. While it’s impressive to experience five-year-old beans that taste as good as last month’s crop, freezing is expensive and, arguably, wasteful. Freezing is an alternative worth considering in hot climates, however, as storage in extreme heat for a few days will ruin most green coffees."

"I believe freezing coffee (both green and roasted) to drastically increase shelf life will be elevated to widely accepted -if not common- practice within the year. It definitely works, but until now there’s been precious little evidence and far too much prejudice for it to break through. Freezing, in combination with vacuum or nitrogen flushing, stops coffee ageing in its tracks. The possibilities created by this are rather compelling…"

rbata, como bem colocado pelo Perger, congelamento, combinado com vácuo, paralisa a perda de qualidade tanto do café cru (verde), quanto do torrado. Coloquei mais atrás minha opção de investir numa seladora a vácuo, fracionamento do café em doses e uso do freezer de uma geladeira duplex. Está funcionando bem.
